Slow-Cooked Harvest Fruit Compote

You will enjoy this sophisticated spin on a tried-and-true recipe, made so easily in the slow cooker.

Ingredients

1 lemon
24 ounces (about 4 cups) dried prunes
7 ounces (about 1 1/2 cups) mixed dried fruit
6 ounces (about 1 1/2 cups) dried apricots
0.5 cup sweetened dried cranberries
0.333 cup raisins
4 cups V8 V-Fusion® Pomegranate Blueberry
1 cup white zinfandel
1 teaspoon vanilla extract

Instructions

Grate 1 teaspoon zest from the lemon.
Stir the prunes, mixed fruit, apricots, cranberries, raisins, juice, wine, lemon zest and vanilla extract in a 6-quart slow cooker.
Cover and cook on HIGH for 4 to 5 hours.
