Chicken & Queso Quesadilla
Your favorite restaurant-style quesadillas can be easily made at home with this fabulous recipe featuring salsa con queso, chicken, red pepper and guacamole that comes together in just 15 minutes.
Ingredients
2 tablespoons Pace® Salsa con Queso1 flour tortilla(8-inch), warmed2 tablespoons chopped boneless, skinless chicken breasts, cooked2 tablespoons guacamoleor diced avocado1 tablespoon diced red bell pepper0.25 cup Pace® Chunky Salsa, any variety0.25 cup sour cream
Instructions
Spread the salsa con queso on the tortilla to within 1/2-inch of the edge. Top with the chicken, guacamole and pepper. Brush the edge of the tortilla with water. Fold over the filling and press the edges to seal.Spray an 8-inch skillet with vegetable cooking spray and heat over medium-high heat for 1 minute. Add the quesadilla and cook for 5 minutes or until lightly browned on both sides and the filling is hot. Serve with the salsa and sour cream.
